A salad that earns its place at lunch

Chickpeas give this salad substance, cucumber brings crunch and feta adds a salty contrast to the tomatoes. It is simple enough to make without turning on the hob, but still feels like a proper lunch with some wholemeal pitta.

Cut the vegetables into small, similar-sized pieces so each forkful contains a little of everything. A ripe tomato contributes much more flavour than extra dressing, so let tomatoes come closer to room temperature before eating if you have time.

How to stop a chopped salad going watery

Cucumber and tomatoes release liquid once dressed. For a lunchbox, pack the lemon dressing separately and add it just before eating. If the cucumber is very watery, scoop out the loose centre with a teaspoon before chopping.

Rinse the chickpeas, then drain them thoroughly. A colander full of wet chickpeas will dilute the dressing. Patting them gently with kitchen paper is helpful if you are assembling the salad immediately.

What makes it a balanced starting point?

Pulses bring fibre and plant protein, while the vegetables add variety. Wholemeal bread or a portion of cooked grain can make it a more substantial meal. The NHS recommends drawing fibre from different foods, including pulses, vegetables and wholegrains; this salad is one practical way to include those ingredients.

There is no need to treat a single salad as a complete diet plan. Choose portions and accompaniments that suit your appetite and the rest of your day.

Make it your own

  • Dairy-free: leave out the feta and add diced avocado just before serving.
  • More herbs: use mint, dill or a combination with parsley.
  • More crunch: add finely sliced radishes or a small diced pepper.
  • Different beans: swap chickpeas for drained butter beans or cannellini beans.
  • A little heat: add a pinch of chilli flakes to the dressing.

For a larger sharing meal, pair it with lemon hummus and warm bread. It also works alongside the chicken and pepper skillet.

Can I prepare it the night before?

Yes: drain the chickpeas, chop the vegetables and mix the dressing in a separate jar. Keep everything covered and chilled, then combine near serving time. Add the feta last so it stays in little pieces instead of disappearing into the dressing. Enjoy within two days and follow any shorter use-by instructions on the ingredients.

Ingredients

Method

  1. Drain the rinsed chickpeas well. Put them in a large bowl with the cucumber and tomatoes.
  2. If you prefer a milder onion flavour, rinse the chopped onion under cold water, drain well and add it to the bowl.
  3. Whisk the olive oil, lemon juice, oregano and black pepper in a small bowl or jar.
  4. Just before serving, toss the vegetables and chickpeas with the dressing. Fold through the parsley and feta, taste, and serve. The feta is salty, so add extra salt only if needed.

Allergen notes: Milk in feta; wheat if served with standard bread. Always check product labels and substitutions.
